I'm not sure the tops come off on all types.
In your photo the right hand one has what looks like spot welds.

And Mr Brown didn't include restoration of the engine, fueling, gearbox, braking system, suspension system, steering! A full restoration, done properly is £15,000 to £20,000. Not worth it unless you aim to keep the car for ever! If you watch Car SOS, think how much restoring some of their cars must ...

That's only paint!
All the other parts, mechanical, etc., etc., need to be fully looked at for a car to be fully restored.

When you have the actual ignition switch dangling on its wires have you tried turning it with a screwdriver?
Odd functions coming and going suggest poor connections, have you tried using spray on electrical connection cleaner?

Eibach and Bilstein are good.
The Bilsteins may well be just inserts, meaning you have to use your existing suspension struts. The top cap on the struts may not be removable. You will need to remove the struts to be able to check.

You sure it was the brackets on the beam and not the bodywork section these attach to?
The body sub frame is usually the suspect area.

I would look at restoration of 'shabby' seat rather than refurbishment. Keep the old leather, don't re-new.

If it's badly rusted, I would cut out all the rust with an angle grinder and weld in some new steel. For using an angle grinder and welding around there you need to move all parts of the fueling system in that area from the car and clean up the area around using a wire wheel on an angle grinder.
