i was just wondering if you can run the pierburg without all the automatic choke stuff.

yes. a variant of this carb was used by vauxhall on the 1.3 and 1.4 astras and novas. these were often fitted with manual chokes from factory, but there used to be a readily available manual conversion for them. this should be a direct fit for the carb used by vw. you could also just make up a bracket and lever to replace the autochoke mechanism, depending how good your fabrication skills are
