Very rare set up in the UK so you may have trouble finding one, we had to live with opening the window.

I only know of one car in the UK with a factory fit AC.
However this car was originally new to Hong Kong.
GTExtra (Sean) had a after market set up on his 16V I seem to remember it was not very successful

i would look at cannibalizing a scrap mk3 golf for the compressor, condenser, expansion valve, receiver and related pipework as it will fit to the standard engine.
then its a case of mounting an evaporator inside the car and somehow ducting the cabin air through it maybe using a separate fan system.
obviously gassing it will require a pro to make sure theres no leaks.
its doable but will take some time and working out.

I had a German market 16v with factory fit A/C
The fan switch had a fourth setting for A/C which turned the cooling fan on as the engine works much harder. It also had a large relay on the fuse board to handle the electrical power.
Looking at your comment you're across the pond, there must be some parts over there otherwise maybe EU.
