warm-up time and rpm / temp

well i have a '92 gt2, 87k miles. it's still on the auto-choke pierburg carb. i've just got a few questions with regards to normal warm-up time and temps.
well on a cold start she starts up first crank every time, its pretty impressive really. idle starts at around 1600-1700 then once i start driving it goes up to just over 2k.... pretty annoying in traffic.
it takes 5-10mins for idle to drop to normal 800-ish rpm (when i first got a couple of weeks ago the idle sometimes dropped to a lumpy 500, but it hesnt done that in a while) .... but the temp gauge doesn't really seem to do much, its usually just there sitting on the bottom but sometimes wanders up into the 1st 1/4 of the dial after driving for a fair bit. what could that be all about, faulty sensor / dial or genuinely an over-cooled engine?
is that choke about normal or could i do with a carb rebuild / webber? and whats the crack with the temp?
