GTX Rebuild, questions, pointers, ideas!

I'm doing some looking around on this site and a few others for some tips and ideas... My GTX has hit 170K and although it runs fine it's starting to feel a little tired.
Now I really don't want to sell the car as I love driving it and I'm happy to take the car off the road to do an engine rebuild plus any other bits and bobs that will no doubt show up!
My question is while it's out is there anything I could do to give it a bit more power, I don't really want to go down the 1.8T route (the idea is nice!) as it seems to be a bit of a pain... but I do like the idea of turning the 1.8 8v in to a 2.0 8v - the car is my daily driver and I spend pretty much all my time driving on B roads and the extra torque low down sounds nice
and from what I read (could be wrong here) it's pretty much bolt the GTX head to the bottom end of a 2lt block?
Is the 2.0 8v conversion as simple as it sounds? as this is within my limits to do the work, and what would be the best engine to use? Are the Golf engines to tall for the Scirocco... or would it be a pointless conversion?
Any pointers will be most grateful as the engine will be pulled out, so I may as well make the most of it!
