Aftermarket coolant temperature gauge fitting

After the head gasket went on my GT (1988, 8v, carb) I want to fit an aftermarket gauge to have a better idea of what the engine is doing in terms of temperature, I've gone for a gauge with an electrical sender which I'm going to machine an adaptor for, but I'm not entirely sure which hose to mount it in in order to get the best idea of engine temperatures. I suppose the other option is to mount it where the original sender is, but I'd like to keep this functioning if possible. Any thoughts/ideas much appreciated.

You'd want it in the head really. If you want to keep the original gauge then use a tee piece to mount the 2 senders.
