Looking for a bit of knowledge here guys, I'm missing a bolt for the timing belt cover (see circled in picture below) does anyone have a part number or rough idea where I can obtain one? (Not listed by GSF)

Do you still have the stud attached to the engine as the nut screws on the stud?

Partsbase (link above) or etka should tell you the thread size and length of the stud. You can then get one from your local nut and bolt dealer

It's not a straight forward type of stud as there is a nut part to it which holds the engine mount onto the block.
Coupe of pictures.

Looking at the pictures above, it's not a straight forward stud, but includes a nut section. I would think the thickness of this is critical.

It's also not some weird vw only fastener. If you know what thread(s) it has, a nut and bolt merchant will be able to sort you out

I have had an unusual problem today.. Trying to unscrew the big flange nut which secures the upper timing cover to the block.. trying to change cambelt.
6mm allen head nut backs out ; just turns and is withdrawing the 6mm diam stud into the block, female nut not coming off and cover wont come off. Any ideas chaps before i cut up the timing cover. Ive managed to see inside the cover and have locktited the stud into the block. Hope this seizes it enough so that the female big flange nut comes off as it should tomorrow. Otherwise its carnage.

If the stud unscrews from the block you should still be able to remove the cover, have you undone the 2 top nuts and able to lift the cover over the studs or try removing the studs from the top of the head (lock 2 nuts on the studs), remove the alternator belt and then pull on the cover while undoing the big flange nut and stud. Once the cover is off you should be able to get a spanner on the the stud and undo the flange nut.
If you look at my pictures above you can see that nothing should stop the stud coming all the way out.
