are these too big, or any way to get them to fit without rubbing during turning?

Depends on how low you are.
You might need to remove the poo shields to stop chaffing.

Wheel size/offset is fine but it's all dependent on the tyres. The lower the profile the better obviously but even different brands can have different profile "shoulders" which can cause rubbing.
