It appears I have some issues with the clocks in the red shed:
1) the mileage appears to go up when it likes and stops for long periods of time, checked the clear cable in the bay and there doesn't seem to be any breaks in it?
2) when I turn the headlights on, the coolant light flashes intermittently and then the unit resets (time, mfa mileage data etc.)
Am I right in assuming that the unit is kaputski and needs replacing?

I think the odometer fault is related to a problem with the gear-wheel in the actual odometer. There used to be several how-to-fix articles on the web.
Not sure about the other fault, but wouldn't be surprised if it's the printed circuit board that's knackered.

Check the earth wire going to the back of the rocker cover on the engine, it's the earth for the instruments, check it's not just holding on by a few stands of wire.
