What carb have you got fitted?
Problem could be a split carb flange (a rubber gasket which the carb sits on)
There is a couple of types so check which one fits.

i agree with mark1gls.... a split carb flange can cause absolute havoc trying to figure out whats going on with exactly the same as you have mentioned. if you want to rule out all the above that kieran aka blackgtx has mentioned, i have all of these on my garage shelf. best way to check the flange for leaks would be to tilt back/forward/ side to side ( slightly ) the carb whilst spraying carb cleaner around the flange and try to notice a difference in engine tone/revs.

Mark it is a Weber carb not the standard pierburg. I will look into replacing as below.
Kieran the ht leads were good as these were replaced a few weeks back, I may have left something loose (but not this time!).
Dizzy replaced a year ago.
No history on the coil...!
Shane I don't have any carb cleaner but I did try it dry and I'd say it is possibly leaking not helped by the fact the filter housing fixing is poor, meaning under rough driving the whole thing will be pivoting on the carb!
The securing nut is seized so can't secure the housing! Don't suppose you have a air filter housing in your arsenal of parts???

unfortunately i dont no matey. normally when that part is broken it normally indicates that the flange is split through too much movement. my bet is the carb flange is the route to 90% of your problems.

Super glue is holding my bolt to the airbox, just don't do it to tight.

Out of the blue GT2
Managed to pick up a flange yesterday so dove into the abyss (with a mild hangover).
Removed the carb
Gasket didn't look too shabby
Cleaned parts as I went for OCD reasons
Also removed parts for the same reasons! I'm thinking it's irrelevant as I'm missing a chunk from my intake meaning it's redundant (I think stage 1 weight reduction [emoji57])
Found this little fella on the back of the carb [emoji848]
Which means it all won't go back together until it's replaced!
Went about cleaning up instead and discovering hedgehogs! Am I right in thinking people grind these down?

cleaning parts as you go is always a good choice, doesnt take long for the bay to look presentable

You really need to re install the hot air feed (metal part fixed to the exhaust manifold) and connect the pipe up to the air intake or you will find the carb suffers from icing up. Not a problem in the warm summer months but come the damp cold spring/winter your car will start to cough and splutter.

All back together including the replaced pipe.
Used some dowty washers to pack out the air box to minimise movement.
The Rocco drives much smoother now. Time will tell to see if it can survive an 'enthusiastic drive'......

I brought the car missing the section between the the hot air feed and the intake. So with the scirocco out for an MOT and I'm left with a heater panel as a momento, so I went about changing the lamp
Lamp from maplins and all back together
Just need a car to fit it to [emoji24]
I dropped it off a week ago and said 'no rush' in the hope it would keep costs down, but didn't appreciate the nice weather and bank holiday I would miss out on as a result!
