If you have discs, people always recommend the 16v scirocco cables 533609721, but in my experience these are too short and require flipping the calipers.

What I currently have is mk2 golf (I believe 16v) ones 191609721A which are 1800mm which are perfect

A carb engine (EX 1.8 or 1.6) would be very little work, probably the easiest direct swap, second only to another DX, JH. But there wouldn't be much point as they're slower. So many engines will fit in the A1 chassis with no modification. That's any engine from a mk1 scirocco, mk2 scirocco, mk1 golf...

I think your flexplate is fine, if it was unbalanced it would get worse with revs. Small chance of a failing torque convertor, but they're pretty bullet proof! The most likely cause is that there is nothing wrong with the wiring, you were just drawing too many amps for that circuit, so the fuse popped. A fuse is just there to ensure you don't overload the circuit with more amps than it's designed to handle. Replace the fuse and don't plug anything more tax...

Brake light issue sounds like the brake light switch which is opened and closed by the brake pedal is sticking.
